risotto with mushrooms and peas mascarpone



Hello everyone !!!!... Today I propose a tasty and creamy risotto.

Ingredients for 4 servings: 320 g rice

• 15 g of dried mushrooms
• 60 g extra virgin olive oil
peas
• • •
onion broth
• 125 g mascarpone

• pepper • Parmesan cheese

Preparation: One hour before
prepare the rice to soak the mushrooms.
In a saucepan, sauté onion in oil. Add the peas and cook a few minutes.
Add drained mushrooms, water bath in which they were previously filtered. Allow to cook.
Combine the rice and toast.
Cook rice adding little by little, the broth, stirring constantly.
When the rice is cooked add the mascarpone, Parmesan cheese and pepper, stir and serve.
